Bhindi Do Pyaza Masala

A delicious Indian stir-fried okra dish cooked with onions and aromatic spices. The crispy bhindi paired with caramelized onions creates a flavorful and satisfying side dish that pairs perfectly with rice or bread.

Bhindi Do Pyaza Masala

Ingredients

  • 300g okra (bhindi), trimmed and cut into 1-inch pieces
  • 3 medium onions, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon dried mango powder (amchur)
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

    Heat oil in a large pan over medium-high heat.

    Add cumin seeds and let them crackle for 30 seconds.

    Add sliced onions and cook for 5-7 minutes until they turn golden brown and caramelized.

    Add the okra pieces to the pan and stir well.

    Sprinkle turmeric powder, coriander powder, red chili powder, and salt over the okra.

    Cook on medium-high heat for 8-10 minutes, stirring occasionally, until the okra becomes tender and crispy.

    Add dried mango powder and garam masala, and mix well.

    Cook for another 2 minutes until the spices are fully incorporated.

    Garnish with fresh cilantro and serve hot.

Cook's Notes

Ensure okra is completely dry before cooking to prevent it from becoming slimy. Cut okra just before cooking to maintain freshness. Cook on high heat to keep the bhindi crispy rather than soft.
