Ingredients

  • 1 cup fresh mint leaves, packed
  • ½ cup fresh cilantro leaves, packed
  • 1 small green chili, adjust to taste
  • 1-inch piece of ginger
  • 1 garlic clove, optional
  • ½ teaspoon cumin seeds or ground cumin
  • ½ teaspoon chaat masala, optional
  • ½ teaspoon salt, adjust to taste
  • 1 teaspoon sugar
  • 2 tablespoons lemon juice
  • 2–3 tablespoons water
  • 2 tablespoons yogurt, optional

Instructions

  1. 1

Rinse the mint and cilantro leaves well, discarding any thick stems.

  2. 2

Add mint, cilantro, green chili, ginger, garlic (if using), cumin, chaat masala, salt, sugar, and lemon juice to a blender or food processor.

  3. 3

Blend until smooth, gradually adding water as needed to achieve a smooth paste consistency.

  4. 4

If using yogurt, mix it in after blending for a smoother, milder chutney.

  5. 5

Taste and adjust seasonings by adding more salt, sugar, or lemon juice as needed.

  6. 6

Transfer to an airtight container and refrigerate for up to 3 days, or freeze in ice cube trays for longer storage.

Cook's Notes

The chutney can be frozen in ice cube trays for convenient portions and longer storage. Adjust the heat level by removing seeds from the green chili, or add more for extra spice.
